B.H.M.S.は2014年新たに最新鋭の機器を設置し、キッチンの設備をアップグレードしました。 このストレスフリーな実習環境で、学生は実社会に出る前に核となる調理のスキルを習得する事ができるでしょう。
カリナリーマネージメント・ディプロマ:
この6-12カ月の調理マネージメント課程は基本的な操作技術と実践的な業績達成トレーニングを通して食料生産の世界を学びます。基本的な調理法、厨房機器、機械や道具の使用方法だけでなく、レシピのコスト計算や厨房での手順等を学びます。また、食品成分の使用方法、厨房の設備や道具を利用するスキルを磨き、基本的なブイヨン、スープ、ソース、サラダの準備の仕方を学び、厨房用語や栄養学、会計原則に精通する方法を学びます。
4-6カ月間のディプロマ課程を修了すると、4-6カ月間のスイスの有名飲食店での有給インターンシップの対象となります。
